Abstract
In general, there are a lot of local fruit that have potential to be commercialized. But there are certain barriers that obstruct that ambition. One of them is because the fruit itself that can easily damage in some times. For that reasons, fruit leather had been produce to overcome that problems. Fruit leather has longer shelf life than fresh fruits. In Malaysia, local fruit like bananas, jackfruits and durians were among the fruit that have potential to be developed into fruit leather industry. So that, designing a low cost machine to produce sheet form fruit seems relevant due to its future. It is important to be a low cost machine to make sure that fruit leather industry can be started from the small and medium industry. In this project, the concepts of the model were generated from the importance and suitability to maintain the barrier of the price later. Although fruit leather consists of process from browning the fruits, blending. sheet transforming then drying, the target or focus of the study is the design and method to transform the fruits into sheet form only. Excluding the drying process.
